I have been very lucky and will be able to see and learn at Lars Gustafsson’s bakery in Höje. He has build up a bakery where he only uses ecological ingredients and bakes in a stone oven. First day we started at 4 am. Ingrid had already been preparing since 2 am. It felt insane sick to get out of bed that early and then to drive through the dark woods. Luckily my good morning mood saved me. It was amazing when the fog got lighter I could see the trees on the other side of Klarälven.
It must be great to have a job where you can done at 1 pm and be able to go home. So much more of the day to use. And so many new hobbies I could have in my life. I would:
Spend more time making my own clothes again. I have 3 suitcases filled with fabric from different countries that are waiting for it.
The second thing would be to take a course at the university. Probably economic history, or something. Or just History. Or Cultural History maybe.
