The Garden is full of grapes and I am tired of taking the car to the market every morning to get fresh bread (I tend to be the morning bird in this crew…). So tonight I tried this Grape foccacia recipe that I will make for us tomorrow morning.
For once my sourdough is staying home in Berlin so I was a bit uncomfortable about having to bake with yeast. But hey, I am on holiday.
I made the dough in the morning and let it rise in the fridge all day to get the most taste out of the flour (I used organic Manitoba flour again). I am not really sure about the amounts, you have to feel the consistency of the dough.
- about 330 gram Wheat flour
- about a cup of water (or I think around 2,5 dl)
- I also used about 2 tblspoons of soy milk b/c I wanted a softer crust
- 3 gram yeast
- 1,5 teaspoon sugar
- 1 teaspoon salt
Let it all rise in the fridge in about 2 tblspoons of a good olive oil.Takes about 9 hours.
Fold and place thin and flat on a oilymetal tray that you can use in the oven. Let rise for 30 min. Sprinkle flake salt, rosemary, grapes and 1 tblspoon of raw sugar on top. Drop about 2 tblspoons of olive oil.
Bake until golden. It took me about 15 min in 200 degrees. But please use your own good feeling.
I think it turned out great. I had to record the sounds when we girls finished the bread. But it is just not appropriate for the web. But I think you can imagine.
