a Breakfast from my Childhood

In a castle, far far away from here, there was a very very hansom knight. Sadly enough he never got married. The only disadvantage with mister Hansom was his lack of money and property (I only had a very small a windy castle).

This is what he ate for Breakfast: French Toast. Or “Poor Knights” as we call them in Sweden.

If you make this like I did this morning, I can assure you that you get anything you want. And no money is needed, you can make it from yesterdays leftovers!

  • last nights Baguette, sliced
  • 1 egg
  • a little bit milk (I used soy milk)
  • raw brown sugar
  • a little bit salt

Let the bread soak in the egg mix and fry as if they where pancakes in a pan. I ate them with fresh figs mixed with some fig/ginger jam. But if you have a sweet tooth: use maple syrup and blueberries (I would if I had it here…). Or, why not add some cinnamon in the eggmix and eat with fresh fall apples!

    in germany we also call them “poor knight” (armer ritter), but it is baked in the oven, several slices of bread at a time. sometimes even with raisins. mmmh! i actually like the pan baked version better though, because of the slightly burned edges.

    Yes, I love the edges too. The crispiness is needed I think. But raisins sounds like a great idea, thank you! And maybe even together with cinnamon?

    yes, cinnamon would be great and, like you already said, apples – or as i would prefer it – applesauce!

    Oh, Apple sauce is a good idea. Next weekend I will make them simple like above and then serve with a less sweet apple mousse with cinnamon! The “poor nights” are sweet as they are :)

    I found your website and I was flip to read that you wrote about “poor knight” (Armer Ritter in German) what is also my favourite childhood-memory-dish! My mother made it mostly with sugar or marmelade and I loved it so much!

    Hi Tini! Did your mom use Marmalade with the poor knights or in the dish? I would love to find more ways of doing it since I am hooked…

    My mom spreads marmelade on the poor knights. What I also love: poor knights with sour cream (with a pinch of cinnamon and agave-syrup) and hot appleslices.
