Perfect Meat Academy

Today I had an unexpected interesting day. I had signed up for a Grill course in the sun with the German Grill Master Steffen Eichhorn. It ended up being 2 hours of drooling over perfect meat. Holy Shit, this is what it should taste like. I have not had much meat the last 1,5 months but seriously, I rather have meat twice a month and then really really good. It will just be a bit of a hazzle to get your hands on a proper steak. Now I know how hard they are to find.

We went through the whole spectrum.

Starting with the Irish Hereford beef. This could be one of my favourites. I did not know that there are more cows then Irish people on Ireland.

Then we had a US beef from Omaha, Nebraska. I really liked that one. The cow had been fed with Corn and Malt and the meat was melting.

Just like the US beef we also had the American version of the Kobe beef, “Wagyu”, from Dan Morgans farm in Nebraska. The first time I had an A-ha experience with meat was for sure with the Kobe beef I had in Singapore 2008. I ate it raw. That piece of meat just melted in my mouth and I have had many dreams of it since. The special thing about this cow is, except for that it is genetic superior, it is treated with more respect then any cow in India. They get to drink Beer daily (to trigger their apatite) and get massages in Sake.

Since you are not allowed to import Kobe beef to Europe any more this can be the new choice. This cow is breaded from the Kobe beef and is fed and treated the same way. They also get to eat corn, alfaalfa and herbs. And you can taste it.

Fourth try out was a beef filet, the most common thing for us girls to order. It is less fatty (the cow does not even use this part of their body). Seriously, I will never make beef filet again. Soooo boooring. All other steaks came out perfectly with just salt. The beef filet would have needed both pepper and barbecue sauce. Never ever again. (See picture- it is the red and dry one…)

Then we went over to the pigs. I normally do not eat pig but, like earlier, this day was different. We got to try 2 different Iberico, the little black pigs that get to eat acorns. The meat gets really nutty. For the first time in my life I ate the pig rose.

Result: I will put shit-load of money into my next order of Meat. But I must say I prefered both the Hereford and the US steak above all.
