Moules marinières

Yesterday there was a major mussel fiest in Prenzlauer Berg. In Der Fischladen I had bought  4kg of mussels for 6 people. Luckily I only cooked 3 and we still had enough leftovers to feed the animals I do not have.

There is something wrong with my understanding of portions. I always cook way too much. But now I know.

Maximum 500gr mussels/person for a main course.

The mussels were cooked with a lot of Chili, Garlic and Tomatoes. I would use these propotions for 2 people:

  • 2 Charlotten onions
  • 3 fine chopped garlic pieces
  • Chili
  • Fennel
  • 4 dl White Wine
  • 4dl Cream and some water
  • 1 kg mussles
  • Tomatoes
  • Spring onions
  • Parsley

Do not add the mussels until the first 6 ingredients are cooking. Add the mussels and cook hard core for about 4 min. Then add the tomatoes and parsley on the top and leave the lid on.

It is crucial that you have a good white bread, of course :)

    Das war wirklich fantastisch – auch (und vor allem) das Brot! Zugegeben hatte ich ein Paar Vorurteile gegenüber Muscheln, die sind jetzt alle dahin! Vielen Dank für den schönen Abend.
