I think I might stay the night somewhere between Aachen and Wiesbaden, does anyone know a sweet place in this area?

You can wander the ruins of the gothic castle on the hillside, which are really massive and gorgeous. The view, the old town, and the bridges on the Neckar River are quite pretty as well.
